Chicken stuffed with blue cheese....

This is a simple way to use up that extra hunk o' blue cheese in your fridge right now.
Smack out a chicken breast between two sheets of plastic wrap until paper thin.
Spread the cheese over the breast, you could even use tapenade or anything which will spread easily at this point.
Roll up the chicken into a tube shape and pierce with wooden skewers.
Season with some salt and pepper, I grilled these on the barbecue but they could be done in the oven at 350 until firm, around 20-25mins.
Let them rest for 5mins and then slice into medallions.
As an after thought you could bring 1 cup heavy cream and 1/2 cup blue cheese to a boil in a pan until smooth and creamy and drizzle it over the chicken.
