I want some pie......

Is what my wife has been asking me for the past two days. I'm not sure why, even she doesn't know but we are sure It's not one of "those" cravings. So today she gets her pie. Raspberry, blueberry, blackberry and strawberry in a home made butter crust. I liked this pie, It wasn't overly tart and just sweet enough. In a berry pie I like to taste the fruit and not the sugar.

The crust which will give you enough dough for a base and a lid in a 9 inch dish:
4 cups plus 4 tbsp all purpose flour
1 tsp salt
2 tsp sugar
16 tbsp butter, cold cut up
6 tbsp iced water

Pulse all dry ingredients and butter in food processor until crumbly, add the iced water and gently mix until the dough forms. Put it into the fridge for 15mins.
Bring the dough back out and half the ball, one half for the base and the other for the lid.
Roll each ball out flat until larger in diameter than the pie dish and lay over the dish, push in the dough and let rest in the fridge for another 15mins.
Wash the base with an egg white wash and pre-bake at 425 for 10 mins.

The filling:
2lbs mixed berries
3tbsp cornstarch
3/4 cup sugar
pinch cinnamon
1tbsp lemon juice

Mix all ingredients with the fruit and place into the pre-baked pie shell. Place the other rolled out dough on to the fruit and crimp the sides. Cut some vents in the center and wash with milk. Sprinkle liberally with sugar and bake at 425 for 15 mins then at 350 for at least an hour or until the pie has deep color.

  3. Thanks Miranda for the comment on my pics, especially coming from you. I tend to think they look a little dark or if taken in the evening, a little yellow because of the kitchen lights. I also think a new camera is not too far away.
