It's not the size of my waist, but an acronym for my favorite kind of burger. Bacon and blue cheese. It's a classic combination and just about any kind of blue cheese works for this monster. I like to use blue Castello which is a triple cream cows milk cheese from Denmark. It's really smooth and not too sharp and pungent like a Stilton. I used 6 oz of meat for each burger and I cracked open another one of my father's day gifts - a jar of burger starter from Williams Sonoma. Cracked is a good word to use because right after I measured 6 tsp into the ground beef, I promptly dropped it on the floor and smashed the jar. I definitely need to buy another because I really liked it. It's like a very sticky paste made from all sorts of ingredients like mustard, caramelised onions, garlic and Worcestershire sauce.
After grilling the burgers and letting them rest for 10 minutes I splashed the buns with some olive oil and gave them a light toast. I placed the meat on the bun and topped it with the cheese, bacon and some caramelised onions which I reduced with butter and brown sugar for about one hour. Some sliced jalapenos and it was ready to be eaten. We're having a small backyard party on July 4th, and I figure I'll be running around too much to be able to take any pictures of food, so let's pretend this burger is the same one I'll be enjoying on Monday.

Absolutely nothing says 4th of July like a big juicy burger! I like your suggestion of using Castello - if I'm eating bleu I much prefer a milder version. Great looking meal.
