I found the recipe on Behind The Bites. A great blog with a really neat instructional layout which makes following the recipes really easy. The recipe was very simple and would be a great side dish for thanks giving or really any day of the week. It has minimal ingredients but all of the right ones making this a winner for me.
Here's the recipe from Behind The Bites:
2.5 lbs of red potatoes, chopped and skins left on
1/4 Cup of butter
1 Cup of shredded cheddar cheese, use some good stuff and maximise the flavor
1 tsp of fresh minced rosemary
In a large pot boil the potatoes in water which goes about an inch over the potatoes. Add some salt and bring to a boil, simmering for about 20 minutes.
Once the potatoes are felling soft when pricked with a sharp knife, drain them and then keep them covered with a lid. Add in the rest of the ingredients and mash with a masher until soft and fluffy.
Season with salt and pepper
Serve on the side with more butter

ReplyDeleteWhat a comfort food! I made mashed potatoes last night but I skimped on butter and cheese, of course we did not eat much saying this tastes too much potato-like. No cheesiness... I will add the amounts you call for and say the heck with the cholesterol :)

ReplyDeleteThose sound really delicious. I used to hate mashed potatoes actually. I thought they were super bland and sometimes dry and just unappetizing. Then I tasted buttery, creamy, garlicy (crucial) mashed potatoes and completely changed my mind!
