Pumpkin waffles are nothing new, in fact I think most recipes have been touched by the orange fruit at some point (yup, It's a fruit) but I thought I'd kick these up a bit by plopping a blob of bacon and maple butter on top. This was the deal sealer, I mean come on...bacon butter would make an old shoe taste hot! It was sweet from the maple syrup meeting salty bacon bits and the two of them were having an awesome time dancing around in my mouth! The flavors from the waffle were also at the same party- cinnamon, cloves and ginger were gettin' groovy with the pumpkin. Ahh good times...fall is here.
Recipe for Pumpkin Waffles with Bacon Maple Butter: Adapted from Epicurious
Prep Time- 15 minutes Bake Time- 30 minutes Yield- 12 (4 inch) Waffles
For The Bacon Maple Butter-
2 sticks unsalted butter at room temperature
8 slices of well done bacon, chopped finely
3-4 Tablespoons maple syrup
In a stand up mixer, beat the butter and chopped bacon until combined. Add the syrup and mix well.
Transfer to a small dish and keep in the fridge until ready to use.
For The Pumpkin Waffles-
2 1/2 cups all purpose flour
1/3 cup light brown sugar
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
4 eggs
1 cup whole milk
1 cup buttermilk
1 cup canned pumpkin
6 Tablespoon melted butter
Preheat the waffle iron.
Sift together the flour, sugar, baking powder, baking soda and spices.
Whisk the eggs in a large bowl. Add the milk, buttermilk, pumpkin and butter. Whisk until smooth and well blended.
Whisk in the dry ingredients until just smooth, don't over work it.
Brush the waffle iron with canola oil or spray. Pour enough batter onto the waffle plate and spread to fill the space. Close the waffle maker and bake until golden and firm.
It's a good idea to keep a tray in a warm oven and transfer the cooked waffles to it while you keep filling the waffle maker.
Serve warm with a scoop of bacon butter on top and drizzled with extra maple syrup.

ReplyDeleteThese waffles look awesome. I recently made waffles for the first time. I improvised the recipe, which was a great mistake. They were totally a disaster... I mean, they looked like waffles. But they weren't very good :/

DeleteAh fantastic! I am loving all the pumpkin posts from the US - reminds me of this time of year back home. They sell "American Halloween Pumpkins" here for some AUD$50, would you believe it?! I've been using butternut in its place... with that in mind I am going to break out our waffle iron for some of these! They look amazing.
